  • 1 tablespoon lemon juice
  • 1/2 teaspoon flaky salt
  • 2 teaspoons chili crisp and 2 lime wedges, for the first finish
  • 2 tablespoons crumbled feta, 1/4 cup thinly sliced cucumber and 1 teaspoon chopped dill, for the second finish
  • 2 large eggs and 1 teaspoon everything seasoning, for the third finish

Method

  1. Toast the slices twice on a medium setting rather than once on high. They come out rigid all the way through without the seeds scorching.
  2. For the egg finish, lower two eggs into boiling water for exactly seven minutes, chill them in ice water two minutes, and peel them under running water.
  3. Halve and scoop the avocados into a bowl. Add the lemon juice and half the salt and mash coarsely with a fork. Leave lumps in it.
  4. Spread the avocado all the way to the edge of each hot slice. Any bare crust dries out and cracks when you bite.
  5. Chili crisp and lime: spoon the chili crisp in a line down the middle, squeeze lime over the top, finish with flaky salt.
  6. Feta, cucumber and dill: shingle the cucumber over the avocado, scatter the feta and dill, grind black pepper over.
  7. Jammy egg: halve the eggs, set them cut side up on the avocado, press them down into it, and shower with everything seasoning.

Tips

Two medium toaster cycles beat one high cycle every time with this loaf. The seeds sit proud of the surface and catch before the crumb has dried, so a high setting gives you burnt seeds on a bendy slice. Two medium passes drive the water out and leave a plank that carries half an avocado without folding. From frozen, add a third cycle.

Mash coarse and salt in the bowl. A smooth puree slides off the slice in one piece at the first bite. Lumps grip, and salt mixed through seasons the whole thing instead of sitting on top.

One avocado covers two slices. ThinSlim slices are smaller than a bakery slab, and a full large avocado on one slice is more than the bread wants to carry.
