Method

  1. Take the cream cheese out 30 minutes ahead. Cold cream cheese tears soft bread.
  2. Slice the red onion as thin as you can and soak it in cold water 10 minutes, then drain and pat dry. This takes the harsh edge off without cooking it.
  3. Toast the split bagels and the bread slices until the surfaces are golden and firm to the touch, about 3 to 4 minutes. Let them cool 2 minutes so they do not sweat on the board.
  4. Spoon the cream cheese into a small bowl, swirl the top with the back of a spoon and set it near the center of a large board with a knife in it.
  5. Fold the salmon into loose ribbons rather than laying it flat, and mound it beside the cream cheese.
  6. Arrange the toasted bagels and bread along one edge, the cucumber, onion and capers in their own clear areas, and tuck the lemon wedges and dill into the gaps.
  7. Finish with cracked pepper and flaky salt over the salmon. Serve at once, while the toast is still crisp.

Tips

Toast, do not skip. Soft n' Fluffy is the softest bagel in the line, which is what makes it good to eat and bad to spread on cold. Toasted, the surface firms up and takes cream cheese without dragging.

Toast at the last minute. A board sits out, and these go back to soft faster than a wheat bagel once the steam has nowhere to go. Two minutes cooling on a rack rather than straight to the board helps.

Room temperature cream cheese is the other half of the same problem. Straight from the fridge it will pull the crumb off the bagel.

Everything you can prep ahead: onion soaked and dried, cucumber sliced, salmon folded, all covered in the fridge up to four hours. Toast and assemble when people arrive.
