Pancakes With Quick Berry Compote

Ingredients
About 1 cup of compote.
- ThinSlim ThinSlim Foods Pancakes, 2 to 3 per person
- 2 cups frozen mixed berries
- 2 tbsp water
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp granulated sweetener, or to taste
- Pinch of salt
- 1/4 tsp vanilla extract
- Butter, for the skillet and for serving

Method
- Put the frozen berries, water, lemon juice and salt in a small saucepan over medium heat.
- Cook 6 to 8 minutes, stirring now and then. The berries collapse and flood the pan first, then the liquid thickens and starts pulling back from the side when you drag a spoon through it.
- Crush about half the berries against the side of the pan with the back of the spoon. Leave the rest whole.
- Take the pan off the heat and stir in the sweetener, zest and vanilla. Taste it. It should still be tart.
- Heat a dry nonstick or cast iron skillet over medium low.
- Lay the pancakes in the skillet and warm them about 2 minutes a side, until the surface is dry to the touch and lightly toasted.
- Stack them, add a knob of butter, and spoon the warm compote over the top.
Tips
Skip the microwave. It steams the pancakes and leaves them limp and damp on the surface. A dry skillet over medium low drives that moisture off and gives you an edge with some chew. If the middle is still cool after two minutes a side, put a lid on for the last thirty seconds.
