Three Easy Low Carb Pasta Dinners to Keep in Rotation

A pasta dinner does not need a complicated sauce or a long shopping list. Often, the useful question is simpler: what is already in the refrigerator that needs a place on the plate?

A handful of vegetables, a sauce you like, and your preferred protein can give the same pasta several different directions. Keep those parts separate in your mind when you shop. You can change one without replacing the whole meal.

Three ways to build the bowl

Tomato, spinach, and Parmesan. Warm your preferred tomato sauce, then add spinach until it softens. Toss with cooked pasta and finish with Parmesan. This is a useful starting point when you want a familiar red-sauce dinner without a long ingredient list.

Pesto, zucchini, and chicken. Cook sliced zucchini until tender and combine it with fully cooked chicken. Toss with pasta and enough pesto to coat it. Add the pesto gradually so it does not overwhelm the other ingredients.

Mushrooms, garlic, and olive oil. Cook sliced mushrooms in a little olive oil until browned, then add garlic briefly. Combine with cooked pasta and finish with parsley and black pepper. Cheese is optional. The mushrooms supply much of the flavor.

Let the package guide the pasta

Different pasta formulations can need different cooking times. Use the directions on the package in front of you rather than the time you remember from another brand. Taste a piece near the end of that range and decide whether the texture suits you.

Prepare the other ingredients before the pasta finishes. That gives you somewhere to put it as soon as it is ready. Add the sauce in stages, toss, and taste before you add more.

If you track carbohydrates or other nutrients, read the serving information for each ingredient. Pasta, sauce, toppings, and the amount you serve all contribute to the meal. A different pasta does not make the other ingredients disappear from that calculation.

Buy for dinners you already like

It is easier to use a new pasta when you pair it with a familiar sauce. Try one combination first. After that, change the vegetables or the seasoning rather than buying ingredients for five unfamiliar recipes at once.
