Why Impastable is not made like regular pasta
Regular dry pasta is mostly semolina, the ground durum wheat that puts about 40g of net carbs in a 2oz serving. Impastable takes most of it out. Oat fiber, wheat fiber, wheat protein isolate and egg whites make up most of the recipe, and durum flour is the last ingredient on the label. Those fibers and proteins cost several times what semolina costs per pound.
It is still wheat pasta: boil it, drain it, sauce it. It contains wheat and egg, so it is not gluten-free. Why we make pasta this way
