Method

  1. Spread the bread cubes on a sheet pan and dry them in a 300F oven for 15 minutes, until they feel dry to the touch but have not colored. Let them cool.
  2. Butter an 8 by 8 inch dish and pile the cubes in.
  3. Whisk the eggs, milk, cream, sweetener, vanilla, cinnamon, nutmeg and salt until completely smooth with no streaks of white.
  4. Pour it over the bread, press the top layer down with a spatula so every cube is submerged, cover and refrigerate at least 4 hours or overnight.
  5. Take the dish out 30 minutes before baking. Heat the oven to 350F.
  6. Brush the melted butter over the top and bake 45 to 50 minutes, until the top is browned and crisp, the center is set and barely wobbles, and a knife inserted in the middle comes out clean.
  7. Rest 15 minutes. Serve warm with whipped cream.

Tips

The overnight soak is doing more work here than in a wheat bread pudding. This bread is mostly fiber and hydrates slowly, so a two hour soak leaves dry centers inside cubes that look wet on the outside.

Dry the cubes first anyway. Dry bread pulls custard in evenly. Fresh bread takes it unevenly and you get a wet layer at the bottom.

Pull it when the center barely wobbles. Custard carries on setting out of the oven, and a bread pudding baked until firm is a bread pudding that will be dry on the plate.

Cinnamon Bagels, cubed, make a chewier, denser version worth trying. They need the same overnight soak.
