Method

  1. Cut the brownies into cubes and leave them uncovered on a plate for 20 minutes so the cut faces dry slightly. They hold their shape better in the layers that way.
  2. Beat the cream with the sweetener and vanilla to soft peaks, the point where a peak folds over on itself rather than standing up.
  3. Loosen the mascarpone with a spoonful of the whipped cream, then fold the rest through in two additions. Stop as soon as it is smooth. Overworking it turns grainy.
  4. Put a third of the brownie cubes in the bottom of a glass bowl, pressing them lightly to the glass so the layer reads from outside.
  5. Spoon over a third of the cream and spread it to the edges, then a third of the berries.
  6. Repeat twice more, finishing with berries.
  7. Dust with cocoa, scatter the shaved chocolate over and refrigerate at least 1 hour and up to 6.

Tips

One hour minimum, six hours maximum. The brownies need time to take up a little moisture from the cream and go tender, but past six hours they give up their structure and the layers blur into one.

Soft peaks, not stiff. Stiff cream sits on top of the brownies in a slab instead of settling between them, and it weeps as it stands.

Build it in glass and press the first layer to the sides. The whole appeal of a trifle is the cross section.

Cloud Cakes Angel Food work in place of the brownies for a lighter version, and Xtreme Cookies Chocolate Chip, roughly broken, give a chunkier one.
