The problem with carbohydrates is the body converts them to sugar during digestion. Pasta is made up of carbs, and for diabetics, sugar is key to managing the disease. A pasta dish, even if the meal is otherwise very healthy, can cause the blood sugar to jump up significantly. Even a meal that looks modest can produce not only the dreaded sugar spike, but also hammer a nutritional plan with calories. While pasta does have many good points, such as being low in fat and salt, diabetics and dieters should approach with caution.
